Crisp Prosciutto with Mango and Avocado Salsa
1 medium mango, chopped coarsely
1 large avocado, chopped coarsely
1 small red onion, chopped finely
1 small red bell pepper, chopped finely *
1 red Serrano chile, chopped finely **
2 tablespoons fresh lime juice
8 slices prosciutto, halved lengthwise ***
- Place mango, avocado, onion, pepper, chile and juice in medium bowl, toss salsa to combine.
- Cook prosciutto in lightly oiled medium skillet until crisp. Serve prosciutto with salsa.
* I use roasted red peppers
** I do not use these
*** I use bacon, as I am not too crazy about prosciutto
I usually let this sit in the refrigerator for a couple of hours before serving and I always double or triple this recipe because everyone loves it so much!
